"Careful with money", implies that you should be careful how you spend
it.  "Careful of money", implies that the money is dangerous and you
should be wary of it.

You might say, "Be careful of money, my son, it is the root of all
evil".

Or you might say, "Be careful with money, my son, it doesn't grow on
trees".
