I schedule my recordings to begin 5 minutes early and end 5 minutes late.
Just in case.  I've noticed that Star's End isn't exact in it's begin/end
times.

All the recording is done on the Raspberry Pi but I FTP the files to my
Windows machine for trimming and listening.  You can use FileZilla or any
other program that can do secure ftp.

For trimming the mp3 file, the best software is a freeware program called
mp3DirectCut (for Windows).  http://mpesch3.de1.cc/

The best thing about this software is it works on the mp3 file without any
further decoding/re-encoding.  It can directly edit the mp3 frames.  Very
cool.

By the way, if you are going to do this, I'd recommend using a direct cable
connection to your network and not use wifi.  I've tried recording over
wifi with a laptop but there are always some hiccups when recording for 5
hours.  A cable connection always works.
