Don't know whether it's worth the effort to you, but you can use
'mkvmerge gui", a small utility which can 'rejigger' the files in the
mkv container so that 1) you can reset the default language to English
and 2) add the English subtitle to the container, either turning it on
or off by default. The utility uses a very straightforward interface,
and the process of 'recoding' the mkv settings is fairly quick, as
well. Not so much a 'recode' as creating a new mkv with the existing
material, just with re-set defaults.
Just a thought for getting yourself a more convenient mkv for future
viewing.
